Last night I made these buffalo chickpea taquitos and actually followed a recipe for once 🤗 I used @elavegan ’s recipe which I HIGHLY recommend because these were AMAZING 👏🏻 I loved how simple and easy these were to make - the ingredients were basically mashed chickpeas, red bell pepper, onion, tomato sauce, and a lot of spices 🔥 I made these on my stories last night and got so many questions about them so I had to share right away 🙋🏼♀️ I topped these with some romaine lettuce, green onion, homemade guacamole, @tofuttibrands sour cream, and some sriracha 🙌🏻 I got the Ben mark of approval too - he loved these! I had the leftovers for lunch today and let’s just say I will be making these again in the immediate future 😁 .
Happy Saturday! 🙋🏼♀️ I had such a nice relaxing Saturday morning before going about my busy day 👍🏻 I love Saturdays because I usually sleep in a bit, and then lay on the couch with my coffee for an hour or so before I start getting ready for the day 🤗 During the week I don’t really get any time to relax in the morning before I leave for work, so my Saturday mornings are sacred 😂 After my slow start to the day I got in a good 10k run, and then did a bunch of errands and running around, typical Saturday stuff 🤷🏼♀️ Looking forward to this evening because I am making homemade pizza for dinner - I think all of my pizza talk over the past couple of days has me craving pizza, so that’s what I’m doing tonight 😁🍕 Hope you all are having a lovely weekend!! 🥰
