Paleo Pasta = Perfect Friday. I'll admit, this is not the most budget-friendly meal, but it will still be cheaper than going out and it's downright delicious.
1 box @cappellos fettuccine
1.5lbs jumbo scallops
5 slices thick bacon
1 shallot, minced
2 garlic cloves, minced
3 tbsp extra virgin olive oil
1 tsp red pepper flakes
1 tsp Italian seasoning
1/2 tsp dried basil
1 lemon, juiced
Fresh cracked pepper
1.) Prepare all of your ingredients: pat scallops with paper towel until COMPLETELY dry, mince garlic and shallot.
2.) In a small bowl, whisk together your olive oil, red pepper flakes, Italian seasoning, basil and a little bit of fresh cracked black pepper. Set aside.
3.) Fry bacon in a nonstick skillet. Remove from pan when fully cooked, and set on a plate.
4.) Bring pot of water to boil (for the noodles.)
5.) Cook scallops in bacon grease for about 2 minutes each side, or until fully cooked. Remove from pan and set with bacon.
6.) Once water is boiling, add the fettuccine and cook for 90 seconds. Strain immediately and set aside.
7.) Add shallots, garlic and juice of one lemon to the same pan that the bacon was in, stirring until shallots begin to brown.
8.) Remove from pan and into your bowl with the sauce. Be careful not to burn the garlic!
9.) Toss the noodles with your sauce. Top with scallops, chopped bacon and a little bit more basil!
10.) Pro tip: buy an extra lemon to use as garnish and squeeze it over the noodles when you're ready to eat! Enjoy!
